      Every knife begins with a slab of high-carbon steel, prized for its strength, hardness, and ability to hold an incredibly sharp edge. We choose carbon steel because it performs where it matters: in real kitchens, under real pressure.

      The steel is heated until glowing and shaped by hammer and press. This is where the blade takes form, gaining toughness and structural integrity through traditional forging techniques.

    • Shaping

      Once forged, the blade is trimmed and refined into its exact profile. This step defines the length, width, and curve of the edge for its intended kitchen use.

    • Grinding

      Grinding smooths and thins the blade. This is where sharpness begins to emerge, and where the balance and feel of the knife are carefully adjusted.

    • Heat Treatment

      To harden the steel, the blade is heated and then rapidly cooled. This process locks in durability and makes the edge capable of holding sharpness through real kitchen use.

    • Sharpening

      We hone each blade by hand using a series of whetstones or belts until the edge is razor-sharp. It’s then tested to ensure it cuts cleanly and effortlessly.

    • Handle Fit

      The handle is shaped and attached for comfort, control, and durability. We use quality materials like hardwood, micarta, or resin, ensuring every knife feels good in your grip.

    • Final Quality Check

      The finished knife is tested for sharpness, durability, and balance. If it doesn’t pass every checkpoint, it doesn’t ship. Every knife leaves our hands ready for serious work.
